How do you poach eggs without them flying apart in the water?

I love poached eggs...and eggs benedict is one of my favorite dishes. Maybe your water is boiling too rapidly. It should be simmering not a rolling boil. They are always going to separate a little but you seem to be doing it right otherwise. Use the ladle to kind of push the white back up on the yolk. I don't like the flavor that the vinegar adds even though it helps to hold the egg together some. I don't think it's possible to mess up an egg...I always eat the mistakes and they are just as good!
